Guckenheimer, a leading food services provider in North America, has achieved an extraordinary milestone by reducing food waste by 64% from its Q2 2022 baseline. This success not only exceeds the company's original goal of a 50% reduction by the end of 2024 but also establishes Guckenheimer as the first major U.S. food service provider to cut food waste by half, setting a new industry benchmark.

A Commitment to Sustainability

The company’s success in surpassing its target is deeply rooted in its commitment to sustainability and environmental responsibility. Guckenheimer’s parent company, ISS, has pledged to halve global food waste by 2027, and this achievement significantly contributes to that mission. Additionally, it aligns with the United Nations Sustainable Development Goal (SDG) 12.3, which aims to halve global food waste by 2030.

Paul Fairhead, CEO of Guckenheimer, expressed his pride in the company’s achievement: "We are incredibly proud to have surpassed our food waste reduction goal by a wide margin. By preventing 983,000 meals from reaching landfills each year, we are contributing to a more sustainable future for all."

The Role of Winnow’s AI Technology

A key factor in Guckenheimer’s food waste reduction success has been its partnership with Winnow, whose AI-powered tools allow kitchens to track and analyze food waste in real-time. Winnow’s “Vision” system, equipped with motion-sensor cameras and smart scales, captures data on over 1,000 food items and provides instant feedback on waste in terms of weight and cost. This data gives Guckenheimer’s kitchens daily, weekly, and monthly reports that inform decisions to improve operational efficiency.

Marc Zornes, CEO and Founder of Winnow, praised Guckenheimer's leadership: "The achievements by Guckenheimer and ISS are a powerful demonstration of the impact that technology can have in reducing food waste. We are honored to support their journey."

Celebrating Remarkable Results

Winnow’s AI tools have been transformative for Guckenheimer, providing the insights needed to drive efficiencies and reduce waste. The system’s ability to pinpoint specific areas of waste has empowered kitchen staff to optimize their food preparation processes, resulting in significant savings.

  • 983,000 meals saved from landfill annually
  • 1,500 metric tons of CO2e saved annually
  • Over $1 million saved in food costs annually, with those savings reinvested into improving their product offering.

Leading by Example

Guckenheimer’s success serves as a powerful example for the entire food service industry. As Dr. Liz Goodwin OBE, Senior Fellow, Food Loss and Waste at the World Resources Institute, stated: "There is increasing recognition of the importance of reducing global food loss and waste. The organization is to be congratulated for surpassing its 50% food waste reduction goal."

Looking Forward

With Guckenheimers 64% reduction milestone achieved, the company is focused on sustaining these results and pushing for further innovations in waste reduction. The partnership with Winnow remains integral to this mission, as Guckenheimer continues to explore new ways to improve its environmental impact while delivering exceptional service to clients.

As the global food service sector grapples with the challenges of food waste, Guckenheimer’s achievements stand as a model for others to follow, demonstrating that AI technology and data-driven strategies can lead to substantial environmental and financial gains.
