InterContinental Fujairah cut food waste by half

InterContinental Fujairah Resort is situated on the shoreline of the exquisite Al Aqah Beach, beneath the spectacular backdrop of the Hajjar Mountains.

The resort has 190 stylish guest rooms and suites and best-in-class banqueting facilities, spread over 69 acres of land.

There are various dining options. These range from an international buffet served in the all-day-dining restaurant, to flame-grilled delicacies and cocktails prepared by the beach, through to a poolside food truck.

The Winnow system provides the team at the InterContinental Fujairah resort with an accurate view of the waste on site since we began working together in November 2018. In this time the site has reduced food waste by 54%. The hotel is estimated to save $84,600 after one year of use, which equates to around 40,000 meals saved annually.

IHG has a strong focus on sustainability. Their ‘Green Engage’ program focuses on making the various IHG properties more sustainable so guests can stay at a property which aligns with their values. Winnow and Green Engage align perfectly. The InterContinental Fujairah Resort focuses on making their property as energy efficient and sustainable as possible.

In the words of Jaehak Lee, Executive Chef at InterContinental Fujairah, “Winnow gave us great support for the entire journey. They made our operation very profitable and efficient.”

In order to reduce food waste, the hotel team started promoting a reservation system where guests are encouraged to reserve tables for the buffet beforehand if they plan to attend.

This allowed the team to get a more accurate estimation of the number of guests attending. They forecast food requirements better by studying the Winnow report and the trends over the past week or month. 

Based on the information the Winnow system provides, the food cost percentage reduced from 33% before using Winnow to 29.5% post-Winnow. The hotel was then able to reinvest these savings into their F&B offering and increase the food quality for guests.
